Thai Satay Pork Skewers with Rice Noodles

What you’ll need
INGREDIENTS
- 800g SunPork Fresh Foods Sirloin Steaks, cut into strips
- 1 tsp. fresh ginger, grated
- 2 tsp. turmeric
- 2 garlic cloves, crushed
- 3 Tbsp. soy sauce
- 1 Tbsp. peanut oil
- 1 Tbsp. palm sugar
- 2 Tbsp. fish sauce
- 2 Tbsp. sambal
- 1/3 cup crunchy peanut butter
- 1 can coconut cream
- 1 tsp. ground coriander
- Water, as needed
- 250g pack rice noodles
- 1/4 cup roasted peanuts, crushed
- 1 fresh chilli, sliced
- ½ red onion, finely sliced
- 4 sprigs fresh coriander leaves
- 1 small cucumber, sliced
- 1 lime, cut into wedges
How to make it
- Whisk ginger, turmeric, garlic, 2 Tbsp. soy sauce, peanut oil, palm sugar, 1 Tbps. fish sauce and 1 Tbsp. sambal together to make the marinade. Add pork strips and mix to coat. Refrigerate for 1hr covered.
- Thread pork strips onto skewers.
- To make the peanut satay sauce, combine peanut butter, 1 Tbsp. sambal, 1 Tbsp. soy sauce, 1 Tbsp. fish sauce, coconut cream and ground coriander together. Add 1 tsp. water to the mixture to thin out the sauce to your liking.
- Prepare rice noodle according to pack instructions.
- Pre-heat grill to med-high heat and cook skewers 2-3 mins each side.
- Garnish with roasted peanuts, chilli, coriander leaves, cucumber and lime.
- Serve and enjoy!
