Cheesy Mushroom Stuffed Loin
Tender and juicy pork loins stuffed with garlic mushrooms, spinach and melted cheese. Simplicity at it's best!

What you’ll need
INGREDIENTS
- 1 SunPork Fresh Foods Pork Loin
- 2 Tbsp. butter
- 150g mushrooms, sliced
- 2 cloves garlic, crushed
- 1 tsp. dried thyme leaves
- 200g baby spinach
- 100g mozzarella grated
- Salt and pepper, to taste
- Toothpicks
- 200g baby spinach leaves
- Mashed potato, to serve
How to make it
- Pre-heat fan forced oven to 180⁰C.
- Cut the loin in half, then slice a pocket into the side of each half. Season both halves with salt and pepper.
- Prepare mushroom filling by melting butter in a fry-pan over high heat, add mushrooms and sauté until they start to turn golden.
- Add garlic, thyme, salt and pepper, then mix to combine. Add spinach and stir until wilted.
- Spoon mushroom mixture into the pocket of each loin and top with cheese.
- Seal the cut in the pork with toothpicks and sear in a fry-pan over high heat to seal the meat.
- Place onto a lined oven tray and into the oven for approx. 25 mins.
- Remove from the oven, cover with foil and rest for approx. 5mins.
- Serve with a spinach salad and mashed potato. Enjoy!
