Pork Fajita with Guacamole
Celebrate Fajita Day with these sizzling delicious, juicy Tex-Mex marinated pork, grilled capsicum wrapped in fresh tortillas and topped with sour cream and guacamole.

What you’ll need
INGREDIENTS
- 4 SunPork Fresh Foods Pork Scotch Fillet Steaks, sliced
- 1 red onion, sliced
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 green capsicum, sliced
- 1 tsp. cumin
- ½ tsp. paprika
- 1 tsp. ground coriander
- 4 Tbsp. oil
- Salt and pepper, to taste
- 6 large tortillas
- Sour Cream, to serve
- Fresh coriander, to serve
GUACAMOLE
- 2 Avocadoes
- 1 Lime, juiced
- 1/4 Cup coriander, roughly chopped
- 1/4 red onion, finely diced
- 1/2 tsp. salt
- pepper, to taste
How to make it
- Combine all the ingredients for the guacamole together in a bowl and mash with a fork until well combined. Cover and set aside until ready to serve.
- Season pork with salt and pepper and place in bowl with onion and capsicums. Add cumin, paprika, ground coriander and mix until evenly coated.
- Add 1 Tbsp. oil to large frypan over med.-high heat. Cook pork and vegetables for 15 mins, stirring occasionally.
- Heat tortillas in a separate pan for approx. 30 secs per side to warm them.
- Serve tortillas with pork and vegetable mix, add guacamole and sour cream and fresh coriander
- Serve and enjoy!
