How to make it

  1. Whisk ginger, turmeric, garlic, 2 Tbsp. soy sauce, peanut oil, palm sugar, 1 Tbps. fish sauce and 1 Tbsp. sambal together to make the marinade. Add pork strips and mix to coat. Refrigerate for 1hr covered.
  2. Thread pork strips onto skewers.
  3. To make the peanut satay sauce, combine peanut butter, 1 Tbsp. sambal, 1 Tbsp. soy sauce, 1 Tbsp. fish sauce, coconut cream and ground coriander together. Add 1 tsp. water to the mixture to thin out the sauce to your liking.
  4. Prepare rice noodle according to pack instructions.
  5. Pre-heat grill to med-high heat and cook skewers 2-3 mins each side.
  6. Garnish with roasted peanuts, chilli, coriander leaves, cucumber and lime.
  7. Serve and enjoy!
