What you’ll need
- 1kg SunPork Boneless Pork Rump
- Salt & pepper
- 2 Tbsp. olive oil
- 1 Tbsp. butter
- 1 cup tomato salsa
- Taquitos
- Soft corn tortillas
- Oil for frying
- Grated cheese
- Fresh coriander
- Fresh avocado, diced
- Fresh jalapeños, sliced
- Avocado lime sauce
- 1 avocado, pitted
- 1/2 cup sour cream
- 11/2 Tbsp. mayonnaise
- Juice & zest of 1 lime
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/4 tsp. garlic powder
How to make it
- Pre-heat fan forced oven to 160ºC.
- Season the pork rump with salt and pepper.
- In a large fry-pan over high heat, add olive oil and butter then sear pork rump
on both sides. - Transfer pork rump and juices to a large cast iron pot and pour in 3/4 of the
salsa, reserving the last 1/4. - Cover the pork rump and cook in the oven for 3 hrs.
- Remove pork rump and shred with two forks, then add back to the cast iron
pot and mix through the cooking juices. - To make the taquitos, heat oil in a large fry-pan over med heat.
- Line a baking tray with paper towel and set aside.
- Warm corn tortillas in the microwave until soft and pliable.
- Add 2 Tbsp. shredded pork rump to the lower third of a tortilla, top with a
sprinkle of cheese and roll up. - Using tongs, carefully place the rolled tortilla in the hot oil, seam side down
and hold with the tongs for about 15 secs to make sure the tortilla doesn’t
come unrolled. - Fry for 1-2 mins per side, until golden brown, then transfer taquito to the
paper towel to drain. Repeat process with remaining tortillas. - Place all avacado lime sauce ingredients in a blender and blend until smooth.
- Sprinkle taquitos with coriander, diced avocado and sliced jalapeños.
- Serve taquitos with lime wedges, reserved salsa and avocado lime sauce.
