Mediterranean Pork Pasta Salad

What you’ll need

  1. 500g SunPork rind on Pork Belly
  2. 1 tsp. salt
  3. 4 cups penne pasta, cooked
  4. ½ cup sundried tomato strips
  5. ½ cup artichoke hearts
  6. ½ kalamata olives, pitted
  7. 2 Tbsp. capers
  8. 2 cups rocket leaves
  9. 3 Tbsp. basil pesto
  10. 1 Tbsp. lemon juice
  11. Salt and pepper, to taste

How to make it

  1. Preheat oven to 160°C.
  2. Pat dry pork belly rind with a paper towel and rub with 1 tsp. salt. Place on baking tray and cook in oven for 3 hours.
  3. Remove and slice into 1cm pieces.
  4. Combine pasta, sundried tomato strips, artichoke hearts, olives, capers, rocket, pesto and lemon juice in a large bowl. Season with salt and pepper.
  5. Top with pork belly and serve immediately.
