Japanese Glazed Meatballs with Soba Noodle Salad

What you’ll need

  1. 300g Pork Mince
  2. ½ cup breadcrumbs
  3. 1/3 cup chicken stock
  4. 1/3 cup spring onions, finely sliced
  5. 1 Tbsp. miso paste
  6. 1 Tbsp. garlic
  7. 1 egg
  8. 1 bottle Japanese teriyaki marinade
  9. 1 Tbsp. oil
  10. Soba Noodle Salad
  11. 1 cucumber, thinly sliced
  12. ½ tsp. salt
  13. 300g soba noodles
  14. 3 Tbsp. soy sauce
  15. 3 Tbsp. honey
  16. 3 Tbsp. sesame oil
  17. 3 Tbsp. pickled ginger
  18. ¼ cup spring onions, thinly sliced

How to make it

  1. Combine cucumber and salt in bowl. Set aside for 15 mins and allow to pickle.
  2. Combine pork mince, breadcrumbs, chicken stock, spring onion, miso paste, garlic and egg in a bowl.
  3. Roll meatballs using 1 Tbsp. of pork mixture.
  4. Heat 1 Tbsp. of oil in frypan over med heat. Place meatballs in frypan in batches and cook for 2 mins each side. Baste meatballs with teriyaki marinade throughout cooking process. Repeat several times until they are sticky and glossy.
  5. Prepare the soba noodles according to packet instructions. Drain noodles and squeeze out excess liquid from the cucumbers. Place in large bowl and add soy sauce, honey, sesame oil, pickled ginger and spring onions.
  6. Toss to combine and serve with meatballs.
