
Pork & Mango Salad

What you’ll need

INGREDIENTS
- 500g SunPork Fresh Foods Pork Tenderloin
- 1 Tbsp. paprika
- 3 garlic cloves, minced
- ½ lemon, juiced
- 3 Tbsp. oil
- 2 mangos, diced
- 2 avocados, diced
- 1 red onion, finely diced
- 1 cucumber, diced
- 1 red chilli, finely diced
- 200g cherry tomatoes, halved
- ⅓ cup coriander, roughly chopped
- 1 lime, juiced
- Salt and pepper, to season
How to make it
- In a bowl combine paprika, garlic, lemon juice and 2 Tbsp. oil. Add the pork tenderloin, cover and place in the fridge to marinate for at least 30 mins.
- Pre-heat fan forced oven to 180°C.
- Heat 1 Tbsp. oil in a fry-pan over med-high heat. Add the tenderloin and sear for 2 mins on each side until browned on all sides.
- Transfer to a lined baking tray and place in the oven. Cook for 15 mins or until the internal temp. reaches 65°C.
- While the pork is roasting, add mango, avocado, red onion, cucumber, chilli, cherry tomatoes, coriander and lime juice into a mixing bowl. Toss to combine and season with salt and pepper.
- Remove tenderloin from the oven and allow to rest for 5 mins then slice to serve.
- Serve with mango salad and enjoy!
