What you’ll need

INGREDIENTS

  • 9 SunPork Fresh Foods Farmhouse Sausages, casings removed
  • 1 Tbsp. fennel seeds
  • 1 Tbsp. chilli flakes
  • 1 red onion, finely diced
  • 4 garlic cloves, minced
  • 150g mayonnaise
  • 150g pesto
  • 3 tomatoes, sliced
  • Salt and pepper, to taste
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil
  • 2 Tbsp. canola oil
  • 4 bread roll subs, sliced down the middle
  • 250g mozzarella, roughly torn
  • Handful fresh basil leaves

 

How to make it

  1. In a fry-pan over a low-med heat, toast fennel seeds and chilli flakes before coarsely grinding. Add to a bowl along with the sausage meat.
  2. Add the diced onion, 3 garlic cloves and mix until everything is well combined. Roll into golf ball sized balls, then refrigerate.
  3. In a bowl, combine mayonnaise, pesto and remaining garlic then set aside.
  4. Place tomato slices on a plate, season with salt and pepper, red wine vinegar and a drizzle of olive oil. Set aside to marinate.
  5. Heat a fry-pan over med. heat with canola oil. Add the meatballs and cook for 8-10 mins, making sure all the sides are golden and cooked through.
  6. To assemble, grab a bread roll, spread generously with creamy pesto mixture on each side. Layer the tomatoes, meatballs, mozzarella and basil.
  7. Serve and enjoy!
