What you’ll need

INGREDIENTS
- 9 SunPork Fresh Foods Farmhouse Sausages, casings removed
- 1 Tbsp. fennel seeds
- 1 Tbsp. chilli flakes
- 1 red onion, finely diced
- 4 garlic cloves, minced
- 150g mayonnaise
- 150g pesto
- 3 tomatoes, sliced
- Salt and pepper, to taste
- 1 Tbsp. red wine vinegar
- 1 Tbsp. olive oil
- 2 Tbsp. canola oil
- 4 bread roll subs, sliced down the middle
- 250g mozzarella, roughly torn
- Handful fresh basil leaves
How to make it
- In a fry-pan over a low-med heat, toast fennel seeds and chilli flakes before coarsely grinding. Add to a bowl along with the sausage meat.
- Add the diced onion, 3 garlic cloves and mix until everything is well combined. Roll into golf ball sized balls, then refrigerate.
- In a bowl, combine mayonnaise, pesto and remaining garlic then set aside.
- Place tomato slices on a plate, season with salt and pepper, red wine vinegar and a drizzle of olive oil. Set aside to marinate.
- Heat a fry-pan over med. heat with canola oil. Add the meatballs and cook for 8-10 mins, making sure all the sides are golden and cooked through.
- To assemble, grab a bread roll, spread generously with creamy pesto mixture on each side. Layer the tomatoes, meatballs, mozzarella and basil.
- Serve and enjoy!
