What you’ll need

INGREDIENTS
- 4 SunPork Fresh Foods Scotch Steaks
- 1kg waffle fries, or fries of your choosing, cooked
Marinade:
- ⅓ cup coriander
- 5 garlic cloves
- 3 limes, juiced
- 150ml orange juice
- 4 Tbsp. chipotle paste
Salsa:
- 1 red capsicum, deseeded
- 1 tomato
- 1 red onion
- 1 jalapeño, deseeded
- 4 garlic cloves
- ¼ cup white vinegar
- 3 limes, juiced
Guacamole
- 1 red onion, finely chopped
- 2 limes, juiced
- 6 avocados, roughly mashed
- Small bunch coriander, chopped
- 2 red chillis, finely chopped
- 2 garlic cloves, minced
- 300g sour cream
- 1 red onion, finely chopped
- Small bunch coriander, roughly chopped
- Salt and pepper, to season
How to make it
- Add all marinade ingredients to a blender or food processor and blend until smooth. Pour over the steaks, ensuring they are well coated. Cover and refrigerate for at least 4 hrs or overnight.
- Pre-heat hooded barbecue to high heat. Grill the capsicum, tomato, onion, and jalapeño for 4–5 mins until charred. Remove from the grill and allow to cool slightly, then blend all salsa ingredients in a blender or food processor until well combined and set aside.
- Grill the steaks for 5-6 mins on each side until the internal temp. reaches 65°C. Remove from heat and rest for 10 mins.
- Meanwhile, prepare the guacamole. In a small bowl, cover the red onion with lime juice to pickle, and set aside.
- In a separate bowl, mix the avocado, coriander, chilli, and minced garlic. Add the pickled red onion and lime juice, then season with salt and pepper. Mix well and set aside.
- Slice the rested steaks into bite-sized pieces. On a large platter, layer the cooked fries, steak pieces, salsa, guacamole, and sour cream. Garnish with chopped red onion and coriander.
- Serve and enjoy!
