Dan & Steph's Asian Pork Meatball Salad
Try this tasty Asian Pork Meatball salad for dinner tonight! Crisp Asian style salad, with a sweet and salty dressing topped with flavorsome meatballs!

What you’ll need

  1. Meatballs
  2. 500g SunPork pork mince
  3. 3 Tbsp. red curry paste
  4. 1 Tbsp. coriander ,chopped
  5. 1 Tbsp. fish sauce
  6. 1 Tbsp. lime juice
  7. 1 egg
  8. 1/4 cup corn flour
  9. 6 green beans, finely sliced
  10. 4 - 6 tbs canola oil
  11. 2 Tbsp. oil
  12. Asian lettuce salad
  13. 100g of mixed lettuce
  14. 12 green beans, thinly sliced
  15. 2 shallots, thinly sliced
  16. 1/4 cucumber, Julienned
  17.  Dressing
  18. 2 cloves garlic, grated
  19. 1 tsp. ginger, grated
  20. 1 tsp. light soy
  21. 1 tsp. sesame oil
  22. 1 tsp. toasted sesame seeds
  23. 1 tsp. honey
  24. 1 tsp. red chilli flakes
  25. 1 tsp. vinegar
  26. Coriander leaves, to serve
  27. Lime wedges, to serve

How to make it

  1. Place pork mince, red curry paste, coriander, fish sauce, beans, lime and egg in a bowl and mix well
  2. Heat 2 Tbs. oil in fry-pan over med. heat.
  3. Place spoonfuls of pork mixture in fry-pan and cook for 2 mins each side and until
  4. golden brown.
  5. Transfer to paper towel lined plate and repeat with remaining mixture
  6. Place all the meatballs into the oven at 180˚C for 5-10mins to finish off.
  7. Wash the lettuce and chop or tear into a large bowl. Add cucumber matchsticks, sliced beans and sliced shallots.
  8. Make dressing by adding all ingredients into a bowl & stir. Taste to ensure it is well balanced out
  9. Place salad and meatballs on plate and drizzle well with dressing. Serve with lime & fresh coriander
