What you’ll need

INGREDIENTS

  • 200g SunPork Fresh Foods Bacon

Crust

  • 250g plain biscuits, finely crushed
  • ¼ cup sugar
  • 275g butter, melted

Cheesecake Filling

  • 700g cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup sour cream
  • ¼ cup bourbon
  • 1 tsp. vanilla extract

Bourbon Caramel Sauce

  • 1 cup sugar
  • ¼ cup water
  • ½ cup cream
  • 2 Tbsp. bourbon
  • 30g butter

How to make it

  1. Pre-heat fan forced oven to 160°C. Grease a 23cm springform cake pan and line the bottom with baking paper.
  2. Put bacon onto a lined baking tray. Place in the oven and cook for 10 mins, turning once until the bacon is crispy. Remove from the oven and allow to cool slightly before chopping into pieces.
  3. Combine all the crust ingredients in a bowl then press the mixture firmly into the bottom of the springform pan to create an even base. Place in the oven and bake for 10 mins, remove and allow to cool.
  4. In a bowl, beat the cream cheese and sugar together with an electric mixer until smooth. Add the eggs one at a time, beating well before adding another. Add the sour cream, bourbon and vanilla extract.
  5. Pour the filling on top of the crust. Place the cake pan in a large roasting dish and pour hot water into the dish until the water sits halfway up the sides of the cake pan.
  6. Place into the oven and cook for 60-70 mins, until golden brown and the center is set. Leave to cool in the oven with the door slightly open for 1 hr, then refrigerate for at least 4 hrs or ideally overnight.
  7. In a saucepan, combine the sugar and water over a med. heat and stir continuously until the sugar has dissolved. Increase the heat to high and continue cooking until the sugar turns a dark amber colour. Carefully remove from the heat and whisk in the cream, bourbon and butter. Set aside to cool to room temp.
  8. Once the cheesecake is chilled, remove from the cake pan and transfer to a serving plate. Pour over the bourbon caramel sauce and sprinkle with the bacon pieces.
  9. Serve and enjoy!
