Bacon Fettuccine Alfredo

What you’ll need
- 200g SunPork Bacon, diced
- 1 onion, diced
- 200g portobello mushrooms, diced
- 350g Fettuccine pasta
- 1 clove garlic, minced
- 6 Tbsp. Butter
- 1 ½ cup heavy cream
- ¼ tsp. salt
- 1 ¼ cup shredded Parmesan cheese
- 100g baby spinach
- ¼ tsp. pepper
- 2 Tbsp. parsley, chopped
How to make it
- Cook pasta according to pack instructions.
- Heat a large fry-pan over med. heat. Add butter and allow to melt and bubble.
- Add bacon and cook until crispy. Add onion, garlic and mushrooms to pan and cook for a further 4 mins.
- Stir in heavy cream and bring to the boil. Reduce heat to low and allow to simmer for 5 to 8 mins or until reduced. Add half of the cheese and whisk until melted. Stir through baby spinach until combined.
- Reserve some pasta cooking water. Toss Alfredo sauce through fettuccine and add pasta water if the sauce needs thinning.
- Garnish with remaining cheese and parsley.
