Bacon Fettuccine Alfredo

What you’ll need

  1. 200g SunPork Bacon, diced
  2. 1 onion, diced
  3. 200g portobello mushrooms, diced
  4. 350g Fettuccine pasta
  5. 1 clove garlic, minced
  6. 6 Tbsp. Butter
  7. 1 ½ cup heavy cream
  8. ¼ tsp. salt
  9. 1 ¼ cup shredded Parmesan cheese
  10. 100g baby spinach
  11. ¼ tsp. pepper
  12. 2 Tbsp. parsley, chopped

How to make it

  1. Cook pasta according to pack instructions.
  2. Heat a large fry-pan over med. heat. Add butter and allow to melt and bubble.
  3. Add bacon and cook until crispy. Add onion, garlic and mushrooms to pan and cook for a further 4 mins.
  4. Stir in heavy cream and bring to the boil. Reduce heat to low and allow to simmer for 5 to 8 mins or until reduced. Add half of the cheese and whisk until melted. Stir through baby spinach until combined.
  5. Reserve some pasta cooking water. Toss Alfredo sauce through fettuccine and add pasta water if the sauce needs thinning.
  6. Garnish with remaining cheese and parsley.
