Bacon Cinnamon Scrolls

What you’ll need
INGREDIENTS
- 250g SunPork Fresh Foods Bacon, cooked and roughly chopped
Dough
- 1 cup milk
- 6 Tbsp. sugar
- 1½ tsp. active dry yeast
- 125g butter, melted and slightly cooled
- 3 cups bread flour
Filling
- 50g butter, softened
- ½ cup brown sugar
- 1 Tbsp. cinnamon
Icing
- 200g cream cheese, softened
- ½ cup butter, softened
- 1½ cup powdered sugar
- 1 tsp. vanilla extract
- 4 Tbsp. milk
How to make it
- In a saucepan over low heat, warm milk until lukewarm. Remove from the heat and whisk in sugar until fully dissolved, then sprinkle in yeast. Whisk gently to combine and sit in a warm place for 10 mins until foamy.
- In a large bowl, combine flour and salt then create a well in the center. Add the milk mixture and butter then stir until a sticky dough forms. Turn the dough out onto a lightly floured surface and knead for about 10 mins until the dough is soft, elastic, and smooth. The dough should be slightly tacky but not sticky.
- Lightly grease a bowl, place the dough inside, cover it with a moist clean cloth, and leave it in a warm place to rise for 1 hr, or until it has doubled in size.
- Once doubled in size, punch down the dough to remove excess air. On a lightly floured surface, roll the dough into a rectangle approximately 15x30cm. Spread the softened butter evenly over the dough, then sprinkle over half the bacon pieces, sugar and cinnamon.
- Starting from one long edge, tightly roll the dough into a log. Slice the log into thick pieces then place on a lined baking dish, leaving 1-2 cm of space between each scroll.
- Cover the scrolls and let them rise in a warm place for 30 mins or until puffed.
- While waiting, pre-heat fan forced oven to 220°C.
- Place the scrolls in the oven and bake for 15 mins until golden brown.
- Meanwhile, to make icing: In a medium bowl, combine cream cheese and butter and beat until light and fluffy. Add powdered sugar and vanilla and beat until smooth. Gradually add milk to loosen the icing, if needed.
- Remove the scrolls from the oven and allow to cool slightly before generously covering with the icing and topping with remaining bacon pieces.
- Serve warm and enjoy!
