What you’ll need
INGREDIENTS
- 1 SunPork Fresh Foods Collar Butt
- 8 cloves garlic, crushed
- 375ml apple cider
- ½ cup chicken stock
- ¼ cup apple cider vinegar
- 2 Tbsp. Dijon mustard
- 2 Tbsp. oil
- 1 brown onion, sliced
- 2 large green apples, peeled and sliced
- Mashed potato, to serve
How to make it
- Deeply score the pork and insert garlic cloves into the scores, repeat until all the cloves are used.
- In the slow cooker, combine apple cider, stock, vinegar and mustard, then season with salt and pepper and turn the slow cooker on to start heating.
- In a fry-pan over med-high heat, add oil and sear all sides of the pork, then remove and add to slow cooker.
- Cover and slow cook for 3 hrs on high.
- Add onion and apple to the slow cooker and cook for an additional 30 mins or until they have softened.
- Use a fork and gently shred the pork.
- Serve with mashed potatoes and enjoy!
