How to make it

  1. Deeply score the pork and insert garlic cloves into the scores, repeat until all the cloves are used.
  2. In the slow cooker, combine apple cider, stock, vinegar and mustard, then season with salt and pepper and turn the slow cooker on to start heating.
  3. In a fry-pan over med-high heat, add oil and sear all sides of the pork, then remove and add to slow cooker.
  4. Cover and slow cook for 3 hrs on high.
  5. Add onion and apple to the slow cooker and cook for an additional 30 mins or until they have softened.
  6. Use a fork and gently shred the pork.
  7. Serve with mashed potatoes and enjoy!
