What you’ll need

INGREDIENTS
- 2 rashers SunPork Fresh Foods Bacon, diced
- 1 cup ricotta
- 3 Tbsp. olive oil
- 1 tsp. lemon zest
- 250g mushrooms, sliced (mix of shiitake, oyster etc.)
- 2 Tbsp. butter
- 1 garlic clove, minced
- 2 Tbsp. lemon juice
- ¼ tsp. cayenne pepper
- 4 slices ciabatta / sour dough
- 50g rocket leaves
- Lemon wedge, to serve
How to make it
- Mix whipped ricotta by blending ricotta, 2 Tbsp. olive oil, lemon zest, and a pinch of salt until smooth and set aside.
- In a fry-pan over med. heat cook bacon, add mushrooms and butter and cook until softened. Add garlic, lemon juice and cayenne pepper.
- While bacon and mushrooms are cooking, toast bread until golden.
- Spread ricotta over toast, top with rocket and mushroom mix.
- Serve with a wedge of lemon and enjoy!
