Thai Coconut Lime Pork

What you’ll need
INGREDIENTS
- 500g SunPork Fresh Foods Pork Loin, thinly sliced lengthways
- 250ml coconut milk
- 1/4 cup palm sugar
- 2 tsp. lime zest
- 2 Tbsp. lime juice
- 2 tsp. fish sauce
- 2 tsp. ginger, grated
- 1/3 cup cashews, toasted
- 1 lime, cut into wedges
- 4 sprigs coriander, leaves removed
How to make it
- To make marinade, mix coconut milk, sugar, lime zest, lime juice, fish sauce and ginger.
- In a deep dish/tray, place pork and cover with marinade, cover and refrigerate for 4-12 hours.
- Remove pork from the marinade, then pat dry and season with salt and pepper.
- On a hot, oiled grill or barbecue add pork and cook for 2-3 mins then flip and cook for a further 5 mins.
- Depending on the thickness of the pork, repeat until cooked through.
- Rest meat for 5mins, then slice.
- Serve and enjoy!
