How to make it

  1. To make marinade, mix coconut milk, sugar, lime zest, lime juice, fish sauce and ginger.
  2. In a deep dish/tray, place pork and cover with marinade, cover and refrigerate for 4-12 hours.
  3. Remove pork from the marinade, then pat dry and season with salt and pepper.
  4. On a hot, oiled grill or barbecue add pork and cook for 2-3 mins then flip and cook for a further 5 mins.
  5. Depending on the thickness of the pork, repeat until cooked through.
  6. Rest meat for 5mins, then slice.
  7. Serve and enjoy!
