Thai Coconut Lime Pork

What you’ll need
INGREDIENTS
500g SunPork Fresh Foods Pork Loin, thinly sliced lengthways
250ml coconut milk
1/4 cup palm sugar
2 tsp. lime zest
2 Tbsp. lime juice
2 tsp. fish sauce
2 tsp. ginger, grated
1/3 cup cashews, toasted
1 lime, cut into wedges
4 sprigs coriander, leaves removed
How to make it
To make marinade, mix coconut milk, sugar, lime zest, lime juice, fish sauce and ginger.
In a deep dish/tray, place pork and cover with marinade, cover and refrigerate for 4-12 hours.
Remove pork from the marinade, then pat dry and season with salt and pepper.
On a hot, oiled grill or barbecue add pork and cook for 2-3 mins then flip and cook for a further 5 mins.
Depending on the thickness of the pork, repeat until cooked through.
Rest meat for 5mins, then slice.
