What you’ll need

INGREDIENTS
- 1 SunPork Fresh Foods Half Leg Ham
- 1kg ripe plums, stones removed and roughly chopped
- 1 ½ cup water
- 750g brown sugar
- 500g macadamias, roughly chopped
How to make it
- Prepare the ham by removing the rind. Starting at the large end, use your fingers to carefully separate the rind from the fat and discard the rind. Using a sharp knife, score the fat, being careful not to cut into the meat.
- Add the chopped plums and water to a saucepan and place over a med. heat. Bring to a gentle simmer and allow to cook for 15-20 mins until the plums have softened.
- Add in the brown sugar and stir until it has dissolved. Increase to a med-high heat and bring to a boil before reducing back to a med. heat to simmer.
- Simmer for 25-30 mins stirring occasionally or until the glaze has thickened. Remove from the heat and allow to cool.
- Pre-heat fan forced oven to 180°C. Line a roasting pan and place the ham in. Generously brush the ham with the plum glaze then place into the oven. Bake for 15 mins, glaze and return to the oven for another 15 mins.
- Remove ham from the oven and reduce oven temp to 160°C. Combine the macadamias and 1 ½ cups of the plum glaze together. Coat the ham with the mixture, lightly pressing the nuts into the ham, and bake for another 30 mins or until golden.
- Remove from the oven and allow to rest for 10 mins.
