What you’ll need

INGREDIENTS
- 500g SunPork Fresh Foods Pork Scotch Fillet, sliced into 1cm thick strips
- 3 eggs, beaten
- 1 cup panko breadcrumbs
- 1 tsp. red pepper flakes
- Canola oil, for frying
- 2 garlic cloves, minced
- 1 Tbsp. ginger, grated
- ⅓ cup soy sauce
- 1½ Tbsp. sriracha
- 2 Tbsp. brown sugar
- 1 tsp. peanut butter
- 3 Tbsp. coriander, chopped
- 1 Tbsp. white sesame seeds
How to make it
- Add beaten eggs to a shallow bowl. In a separate shallow bowl, combine panko breadcrumbs and red pepper flakes.
- Dip pork strips into the egg, then place in the panko mixture and press to coat thoroughly.
- In a large, deep fry-pan, add 2-3cm oil, then heat over med-high heat.
- Carefully place the pork pieces in the fry-pan, making sure not to overcrowd the pan. Fry for 3 mins each side or until golden brown. Remove from the fry-pan and drain on paper towel. Repeat with all remaining pork tenders.
- In a small saucepan, combine garlic, ginger, soy sauce, sriracha, brown sugar and peanut butter over med-high heat. Bring to the boil for 3 mins, whisking occasionally. Reduce heat and simmer until the sauce has thickened and can coat the back of a spoon.
- Drizzle sauce over the pork pieces.
- Place on a plate and sprinkle with coriander and sesame seeds.
- Serve and enjoy!
