Pork Power Bowl with Avocado Coriander Cream

What you’ll need

  1. 1 Pork Tenderloin
  2. 2 Tbsp. soy sauce
  3. 1 Tbsp. dark soy sauce
  4. 2 cloves garlic, minced
  5. ½ tsp. white pepper
  6. 3 Tbsp. honey
  7. 3 cups baby spinach
  8. 2 eggs, hard boiled and halved
  9. 1 cup brown and wild rice medley, cooked
  10. 2 carrots, cut into ribbons
  11. 3 stems broccolini, chopped and lightly steamed
  12. 1 cup mixed nuts
  13. Spring onions, to serve
  14. Sesame seeds, to serve
  15. Dressing/cream
  16. 1 avocado, peeled & pitted
  17. 1 line, juiced
  18. ¼ cup almond milk
  19. ½ tsp. salt

How to make it

  1. Pre-heat fan forced oven to 180°.
  2. Combine soy sauce, dark soy sauce, garlic, pepper, and honey in a bowl.
  3. Place tenderloin in bowl and cover with marinade. Cover with film wrap and refrigerate for 30 mins.
  4. Place tenderloin on baking tray and bake for 40 mins or until internal temperature reaches 75°.
  5. Place spinach in a bowl, and top with eggs, rice medley, carrot ribbons, broccolini and missed nuts.
  6. Thinly slice pork tenderloin and place in salad. Sprinkle with spring onions and sesame seeds.
  7. In a food processor, combine dressing ingredients.
  8. Drizzle dressing over salad and enjoy!
