Controversial Pizza Series: Bacon & Broccoli Pizza

What you’ll need

INGREDIENTS

  • 250g SunPork Fresh Foods bacon, chopped
  • 1 small broccoli head, cut into small florets
  • 1 Tbsp. olive oil
  • ½ tsp. chilli flakes
  • ½ cup cream cheese, softened
  • 1 pizza base
  • 1 cup mozzarella cheese, grated
  • ½ small red onion, thinly sliced
  • ½ cup cranberry sauce
  • 2 Tbsp. balsamic vinegar
  • Salt & pepper, to taste

 

How to make it

  1. Pre-heat fan forced oven to 220°C.
  2. Cook the bacon in a fry-pan over med. heat until crispy. Remove and drain on paper towel.
  3. In a small saucepan over high heat, bring salted water to the boil and blanch the broccoli for 1 min, then drain and rinse with cold water.
  4. Spread the blanched broccoli onto a lined baking tray, drizzle with olive oil, then sprinkle with chilli flakes, salt, and pepper. Roast for 8 mins, or until crispy.
  5. Spread the softened cream cheese evenly over the pizza base.
  6. Sprinkle mozzarella over the cream cheese, then add the bacon, roasted broccoli, and red onion.
  7. Bake for 12-15 mins, or until the crust is golden and the cheese is bubbling.
  8. Meanwhile, heat the cranberry sauce and balsamic vinegar in a small saucepan over low heat. Stir until smooth and slightly thickened then set aside.
  9. Remove the pizza from the oven, then drizzle the cranberry balsamic sauce over the top and sprinkle with additional red onion.
  10. Serve and enjoy!
