Turkish Shish Kebabs with Zucchini Fritters

What you’ll need
- 1 SunPork Pork Tenderloin
- 3 Tbsp. Paprika
- 1 ½ Tbsp. dried mint
- 1 Tbsp. cinnamon
- 1 Tbsp. Garlic Powder
- ½ tsp. ground cumin
- 1 tsp. salt
- 1 tsp. pepper
- ½ tsp. ground cloves
- Wooden or metal skewers
- 1 Tbsp. oil
Fritters - 2 large zucchinis, grated
- ½ cup feta cheese, crumbled
- 1 Tbsp. minced dill
- 1 tsp. chopping mint
- 2 large eggs
- ½ tsp. black pepper
- ½ salt
- 1 tsp. cumin
- 1 tsp. ground coriander
- ¼ cup plain flour, plus more as needed
- Greek yoghurt, to serve
- Lemon wedges, to serve
How to make it
- Slice the pork tenderloin into long thin strips and place into a bowl.
- Combine paprika, mint, cinnamon, garlic powder, cumin, salt, pepper and cloves. Rub into pork strips.
- Thread strips evenly onto skewers, cover and place in refrigerator to marinate overnight or for at least 2 hours.
- To make the fritters, combine zucchini, feta, dill, mint, eggs, pepper, salt, cumin, coriander and flour in a large bowl.
NOTE: The consistency should be like pancake mixture – Add more flour if required.
- Heat deep fryer to 180°C.
- Using a large spoon, slowly drop spoonfuls of the mixture into the deep fryer. Cook for 2 – 3 mins or until cooked through. Remove and drain on paper towels.
- Place a large fry-pan over high heat with 1 Tbsp. of oil. Cook the pork skewers for 2 – 3 mins on each side or until cooked through.
- Serve skewers with zucchini fritters, Greek yoghurt and lemon wedges.
