Jerk Pork Salad
This Jerk Pork Salad is super healthy and flavoursome. Cook this fresh salad for dinner tonight or take it to work or school for a simple tasty lunch!

What you’ll need

  1. 500g SunPork Pork Rump Steaks
  2. 2 tsp. mixed spice
  3. 1 tsp. dried thyme
  4. Pinch of cayenne pepper
  5. 2 tsp. olive oil
  6. 400g pineapple, peeled, sliced, quartered
  7. 500g microwave brown rice & quinoa
  8. 400g can black beans, rinsed, drained
  9. 1 bunch fresh coriander
  10. 1 red chilli, thinly sliced
  11. Lime wedges, to serve
  12. Dressing
  13. 60ml light soy sauce
  14. 2 Tbsp. olive oil
  15. 2 Tbsp. lime juice
  16. 1 Tbsp. brown sugar
  17. 1/2 tsp. ground ginger

How to make it

  1. Combine the mixed spice, thyme, cayenne pepper and oil in a large bowl.
  2. Add the steaks, coat well then set aside.
  3. Heat a fry-pan over high heat. Cook the pineapple in batches,
    for 2 mins each side or until charred, then transfer to a plate.
  4. In the same pan, cook the pork steaks for 6 mins on one side. Turn over
    and cook for 2 mins the other side. Remove and allow to rest for 2 mins,
    then slice.
  5. Meanwhile, combine the rice mix and beans in a glass bowl and microwave
    for 3 mins or until warmed through.
  6. Combine the dressing ingredients in a small jug. Pour 2/3 of the dressing over
    the rice mixture and stir to combine.
  7. Divide the rice mixture among bowls and top with the pork and pineapple.
  8. Drizzle with the remaining dressing and top with fresh coriander and chilli.
  9. Serve with lime wedges.
