Pork Pot Pie

What you’ll need
- 500g Pork fillet, diced
- 200g bacon, diced
- 1 brown onion, diced
- 4 cloves garlic, minced
- 1 fennel bulb, sliced
- 1 apple, sliced
- 4 Tbsp. butter
- 2 Tbsp. plain flour
- 500ml chicken stock
- 300g baby spinach
- Salt and pepper, to season
- 4 sheets puff pastry
- 2 egg yolks
How to make it
- Preheat oven to 200˚
- Heat a deep based fry-pan over med. Heat. Place 1 Tbsp. of oil in pan followed by the onion and garlic. Cook for 2 mins or until soft.
- Add pork and bacon and brown on all sides. Add fennel and apple. Saute for 5 mins.
- Add butter and stir through ingredients until bubbling. Slowly add the flour and mix through to combine well. Continue to stir mixture for 2 mins too cook out flour.
- Add chicken stock and salt and pepper. Add lid and allow to simmer until sauce has thickened. Stir through spinach leaves.
- Pour mixture into a 30cm x 20cm baking dish. Place puff pastry over the top of the baking dish and seal the pastry around the edges.
- Brush pastry with egg yolk and place in oven for 30 mins or until golden brown.
