Maple Bacon Anzac Biscuits

What you’ll need

  1. 500g streaky bacon, diced
  2. 2 Tbsp. maple syrup
  3. 1 cup rolled oats
  4. 1 cup plain flour
  5. 2/3 cup brown sugar
  6. 2/3 cup desiccated coconut
  7. 120g butter
  8. 2 Tbsp. golden syrup
  9. 1/2 tsp. bicarbonate soda

How to make it

  1. Preheat fan forced oven to 150 degrees. line 3 baking trays with baking paper.
  2. Heat medium fry pan over high heat. Cook bacon until crispy. Remove and pat dry with paper towel.
  3. Clean fry-pan and return to high heat. Return bacon to fry pan and add maple syrup. Cook until maple syrup has thickened and bacon is coasted and sticky.
  4. Combine oats, flour, coconut and bacon in a bowl.
  5. Place butter, syrup and 2 Tbsp. cold water in a saucepan over med. heat. Stir until butter has melted. Add bicarbonate or soda.
  6. Add butter mix to flour mix and stir to combine.
  7. Roll level Tbsp. of mixture into balls and place on baking tray 10cm apart.
  8. Flatten slightly and bake for 12 mins or until golden. Allow to stand on tray, then remove to cooling rack.
