Pork Medallions and Scallops
Want to make something a little special without wasting hours in the kitchen? This simple pork and scallop recipe is delightfully simple and incredibly delicious. Hot tip: it's even better with a nice glass of Riesling.

What you’ll need
INGREDIENTS
- 500g SunPork Fresh Foods Pork Tenderloin
- 4 Tbsp. soy sauce
- 2 Tbsp. sesame oil
- 1 tsp. chilli oil
- 1 Tbsp. lemon juice
- 3 garlic cloves, crushed
- 1 tsp. Dijon mustard
- 1 tsp. ginger, grated
- 1 bunch Asian greens,/ broccolini
- 1 dozen scallops, roe removed
- Lime juice
How to make it
- To prepare the marinade for the pork, combine 2 Tbsp. soy sauce, sesame oil, chilli oil, lemon juice, 2 crushed garlic cloves and Dijon mustard. Pour over the pork and marinate in the fridge for up to 2 hrs or ideally overnight.
- Pre-heat fan forced oven to 200⁰C.
- Place pork on a lined baking tray and cook for 15-20 mins, basting with leftover marinade every 5 mins.
- Remove from the oven and rest for 10 mins before slicing.
- Heat oil in a fry-pan over med. heat and sauté garlic and ginger, add greens and remaining soy sauce and cook until greens are tender.
- To prepare scallops, rinse with water and pat dry. Season with salt and pepper.
- Heat oil in a fry-pan over high heat and carefully place scallops. Cook for 1 min per side, remove from the pan and drizzle with lime juice.
- To serve, place sliced pork with greens, top with scallops and drizzle with pork pan juices. Enjoy!
