What you’ll need
INGREDIENTS
- 6 rashers SunPork Fresh Foods Bacon, chopped into thin strips
- 150ml barbecue sauce
- 2 Tbsp. Worcestershire sauce
- 2 dozen oysters, shucked in shell
- Salt & pepper, to taste
- 1 lemon, cut into wedges
- 1 sprig parsley, to garnish
- Rock salt, to garnish
How to make it
- Pre-heat fan forced oven to 200⁰C.
- In a fry-pan over med. heat cook bacon until just starting to crisp.
- In a bowl, combine bacon, barbecue, and Worcestershire sauces and season with salt and pepper.
- Place oysters on a baking tray, use foil scrunched into shape to help balance oysters if needed.
- Spoon Kilpatrick mixture evenly onto the oysters and bake in the oven for 5-10 mins.
- Serve in the shell on top of rock salt, garnish with fresh lemon and parsley.
