
Bacon Wrapped Cocktail Tomatoes
This simple yet elegant canapé combines the smoky, salty goodness of bacon with the juicy sweetness of ripe tomatoes.

What you’ll need

INGREDIENTS
- 200g SunPork Fresh Foods Bacon Rashers
- 1 punnet cherry tomatoes
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. honey
- 2 sprigs fresh basil leaves, to serve
- 1 shallot, finely sliced
How to make it
- Wrap each tomato with bacon and secure with a toothpick and season with salt and pepper.
- In a fry-pan over med. heat cook bacon-wrapped tomato, turning regularly to brown on all sides and remove from pan.
- In a small bowl, mix together balsamic vinegar and honey, and brush over bacon-wrapped tomatoes.
- Sprinkle with shallots and garnish with basil.
- Serve and enjoy!
