Low & Slow Sweet BBQ Ribs

What you’ll need
INGREDIENTS
- 1 rack SunPork Fresh Foods Meaty Loin Ribs
- 1 cup sweet spicy barbecue rub
- 1 cup your favourite barbecue sauce
- ½ cup brown sugar
- 4 Tbsp. unsalted butter
- 2 Tbsp. maple syrup
How to make it
- Prepare ribs by peeling off the membrane along bone side.
- Sprinkle both sides of the ribs with the spice rub approx. 1 hr prior to smoking.
- Pre-heat BBQ / Smoker to 135⁰C / 275⁰F.
- Smoke the ribs, bone side down for approx. 75 mins or until the rub looks dry. Internal temp should be approx. 65⁰C / 145⁰F. Remove from the smoker.
- Layout a large sheet of foil with brown sugar in the middle. Place ribs, meat side down on brown sugar, and knobs of butter on the top.
- Drizzle maple syrup over the rack, then wrap tightly with foil.
- Return ribs to the smoker, meat side down for approx. 2 hrs or until the meat beside the rib bone is tender.
- Remove and unwrap ribs, place bone side down and cover generously with barbecue sauce. Return to the smoker for 10mins for sauce to set.
- Remove the ribs from smoker, cut into segments between rib bones.
- Serve and enjoy.
TIP: Check tenderness by pushing a plastic knife into the meat next to the bone. If it goes in easily the ribs are ready. If there is resistance, wrap back up, return to the smoker for 10 mins.
