What you’ll need
- Three Aussie Farmers or SunPork Leg Ham
- 6 eggs
- 2 Tbsp. Thickened cream
- 2 Tbsp. Basil Pesto
- 30g butter
- 2 English muffins
- 2 Tbsp. onion relish
How to make it
- Toast English muffins as per packet instructions
- Whisk eggs, cream and pesto together. Place a medium fry-pan on med. heat, melt butter and pour in egg mixture.
- Scramble the eggs by continuously stirring the mixture in the pan for 1-2 mins or until just cooked.
- Layer the ham on top of the muffin, followed by the eggs. Top with onion jam and enjoy!
