What you’ll need

  1. 500g SunPork Pork Mince
  2. 2 Granny Smith Apples, Grated
  3. 4 spring onions, thinly sliced
  4. 2 garlic cloves, minced
  5. 3 Tbs. Thyme, finely chopped
  6. ½ cup caramelised onion relish
  7. 4 sheets puff pastry
  8. 2 eggs, 1 whole and 1 beaten
  9. 1 cup breadcrumbs

How to make it

  1. Preheat oven to 220 degrees.
  2. Combine pork mince, apples, garlic, thyme, breadcrumbs and 1 egg in a bowl.
  3. Lay pastry sheets on a flat surface. Using a large mixing bowl as a guide, cut a circle of pastry out with a knife. Using a smaller bowl, make another cut out in the middle of the circle pastry to from a ring. Repeat this process a second time making a larger 2nd ring with a bigger mixing bowl. TIP: Ensure that the middle circle is the same size on both pastry ring.
  4. Place pastry ring on baking tray. Form the pork mixture on top of the pastry ring, spread caramelised onion on top of the mixture and then cover with another pastry ring to enclose the meat.
  5. Brush with beaten egg and place in the oven for 30 mins or until golden brown.
