Smoked Pork Cheek Sandwich with Spiced Pineapple Relish

What you’ll need
INGREDIENTS
- 500g SunPork Pork Cheeks
- 4 pineapple slices
- 1 Tbsp. soy sauce
- 1 sourdough loaf, thick cut
- 1 butter lettuce, sliced
- 2 pickled jalapenos, sliced
- Butter, to taste
- Salt and pepper, to taste
Spiced Pineapple Relish
- 300g pineapple
- 2 garlic cloves
- 30ml lemon juice
- 1 tsp. lemon zest
- 1 tsp. smoked paprika
- 50g brown sugar
- 1 jalapeno
- Salt and pepper, to taste
How to make it
- Pre-heat smoker to 110ºC with the wood chips of your choice.
- Blend all the spiced pineapple relish ingredients together until smooth.
- Season the cheeks with salt and pepper, then place into the smoker directly on the racks. Smoke for 2 hrs.
- Transfer the cheeks to an aluminium tray and spoon 4 large Tbsp. of spiced pineapple relish over the top. Cover with foil and return to the smoker for a further 2 hrs. When cheeks are soft and tender, remove from the smoker and set aside to rest for 5 mins.
- Grill the pineapple till browned, brush with soy sauce, then set aside.
- Shred the smoked pork cheeks.
- Butter one slice of sourdough then layer with butter lettuce, grilled pineapple, smoked pork cheeks, spicy pineapple relish, a few jalapeno slices and top with a slice of sourdough.
- Repeat with remaining ingredients.
- Serve and enjoy!
