Bacon & Apple Fritter Bites with Cider Glaze

What you’ll need
INGREDIENTS
- 4 rashers SunPork Fresh Foods Bacon, diced
- 1 cup plain flour
- 2 Tbsp. white sugar
- 1 tsp. baking powder
- ½ tsp. cinnamon
- Pinch of salt
- 50ml milk
- 1 egg, beaten
- 1½ tsp. vanilla paste
- 1 green apple, diced
- Vegetable oil (for frying)
- 250g icing sugar
- 3 Tbsp. apple cider
How to make it
- In a bowl, whisk together flour, sugar, baking powder, cinnamon and a pinch of salt.
- In a jug or bowl, combine milk, beaten egg and 1 tsp. vanilla paste. Slowly pour the wet mixture into the dry ingredients, stirring until just combined.
- Add the bacon and apple and fold through the mixture until evenly distributed.
- Pour 2-3cm deep of oil into a deep fry-pan and heat to approx. 170˚C over med-high heat.
- Carefully drop spoonful’s of batter into the hot oil in batches, being careful not to overcrowd the pan.
- Fry for 1-2 mins, turning occasionally, until fritters are golden brown all over.
- Transfer to a wire rack to drain. Repeat until all the batter is used.
- While fritters cool, make the glaze by whisking icing sugar, apple cider and remaining ½ tsp. vanilla paste in a bowl until smooth.
- Arrange fritters on a serving dish, dust with extra icing sugar and drizzle with cider glaze.
- Serve and enjoy!
