Bacon & Apple Fritter Bites with Cider Glaze

What you’ll need

INGREDIENTS

  • 4 rashers SunPork Fresh Foods Bacon, diced
  • 1 cup plain flour
  • 2 Tbsp. white sugar
  • 1 tsp. baking powder
  • ½ tsp. cinnamon
  • Pinch of salt
  • 50ml milk
  • 1 egg, beaten
  • 1½ tsp. vanilla paste
  • 1 green apple, diced
  • Vegetable oil (for frying)
  • 250g icing sugar
  • 3 Tbsp. apple cider

 

How to make it

  1. In a bowl, whisk together flour, sugar, baking powder, cinnamon and a pinch of salt.
  2. In a jug or bowl, combine milk, beaten egg and 1 tsp. vanilla paste. Slowly pour the wet mixture into the dry ingredients, stirring until just combined.
  3. Add the bacon and apple and fold through the mixture until evenly distributed.
  4. Pour 2-3cm deep of oil into a deep fry-pan and heat to approx. 170˚C over med-high heat.
  5. Carefully drop spoonful’s of batter into the hot oil in batches, being careful not to overcrowd the pan.
  6. Fry for 1-2 mins, turning occasionally, until fritters are golden brown all over.
  7. Transfer to a wire rack to drain. Repeat until all the batter is used.
  8. While fritters cool, make the glaze by whisking icing sugar, apple cider and remaining ½ tsp. vanilla paste in a bowl until smooth.
  9. Arrange fritters on a serving dish, dust with extra icing sugar and drizzle with cider glaze.
  10. Serve and enjoy!
