What you’ll need
- SunPork Pork Mince
- 1 brown onion, diced
- ½ packet vermicelli noodles
- 1 jar Thai green curry paste
- 1 cup bean sprouts
- ½ cup coriander, chopped
- 1 lime
- 20 spring roll wrappers
- 1 tsp. corn flour mixed with water
- Sweet chili sauce to serve
How to make it
- Place onion and mince in med. Frypan over med. Heat. Cook for 5 mins or until mince is cooked through.
- Cook vermicelli noodles according to packet instructions.
- Add half a jar of green curry paste, bean sprouts, coriander, vermicelli noodles to the pork mince. Add the zest of ½ a lime as well as the juice of a whole lime to the pork mixture.
- Set aside and allow to cool completely.
- Place 1 spring roll wrapper on a flat surface with a corner facing you. Place 3 Tbsp. of pork mixture across the corner. Fold the corner over the filling and roll up firmly to enclose. Brush the end corner with corn flour mixture to seal. Repeat with remaining mixture.
- Heat deep fryer to 180 degrees. Place each spring roll in fryer for 2 mins or until golden and crispy. Serve immediately with sweet chili sauce.
