What you’ll need

INGREDIENTS

  • 200g SunPork Fresh Foods Half Leg Ham, diced
  • 2 leeks
  • 25g butter
  • 2 Tbsp. olive oil
  • 1 tsp. flaky sea salt
  • Freshly ground black pepper
  • 200g Parmesan, grated
  • 450g flour, plus extra for dusting
  • 2 Tbsp. baking powder
  • 100g cold butter, cubed
  • 2 cups plain yogurt
  • 1 tsp. kosher salt
  • 1 egg, lightly beaten with a splash of milk or water (for egg wash)

How to make it

  1. Trim off the root, tough green parts, and outer layer of the leeks. Slice in half lengthwise, rinse well under running water, then cut into thin slices. Soak in cold water for 10 mins to remove any grit. Drain, pat dry, and set aside.
  2. Heat butter and olive oil in a pan over med-low heat. Add leeks, salt, and black pepper, then sauté for 10-15 mins until soft. Transfer to a bowl and chill in the fridge for 20 mins or ideally overnight.
  3. In a large mixing bowl, combine parmesan, flour, and baking powder. Mix in the cold butter cubes with two knives or a fork until crumbly. Stir in yogurt, ham, salt, and chilled leeks until just combined.
  4. Turn the dough onto a floured surface and gently shape into a circle. Use a biscuit cutter or glass to cut circles from the dough, then place onto a lined baking tray. Chill in the fridge for 1 hour.
  5. Preheat fan-forced oven to 160°C. Brush dough discs with egg wash. Bake for 25-30 mins until golden and crisp on the outside.
  6. Serve and enjoy!

NOTE: Be careful to keep the dough chilled and only mix until just combined. If you overwork the dough, your scones will be tough and chewy!
