Bacon Guacamole Cheese Ball

What you’ll need
INGREDIENTS
- 8 rashers SunPork Fresh Foods Bacon
- 2 avocadoes, diced
- 250g cream cheese
- ½ red onion, diced
- 1 red capsicum, diced
- ½ tsp. cumin
- 4 sprigs fresh coriander, chopped
- 1 lime, juiced
- Salt and pepper, to taste
- Biscuits, to serve
How to make it
- In a fry-pan, cook bacon and set aside on paper towel until cool enough to handle.
- In a bowl combine avocado, cream cheese, onion, capsicum, cumin, coriander, lime juice and season with salt and pepper, then mix until smooth.
- Refrigerate for approx. 20min to firm up.
- Crumble bacon into a separate bowl.
- Shape the guacamole mixture into a large ball.
- Sprinkle bacon over the top until evenly covered.
- Store in the refrigerator until ready to serve.
- Serve with biscuits and enjoy!
