INGREDIENTS
- 1kg SunPork Fresh Foods Mince
- 1 Tbsp. oil
- 1 brown onion, finely diced
- 1 red capsicum, diced
- 4 garlic cloves, crushed
- 2 jalapeños, crushed
- 1 tsp. chilli powder
- 2 Tbsp. ancho chipotle paste
- 2 tsp. cumin
- 1tsp. ground coriander seeds
- 1 tsp. smoked paprika
- 1 tsp. salt
- 800g crushed tomatoes
- 180g tomato paste
- 2 cups beef stock
- 1 avocado, sliced to serve
- 1 spring onion, finely sliced to serve
- 1 lime, cut into wedges, to serve
- 2 sprigs fresh coriander leaves, to serve
- 200g corn chips
How to make it
- In a large pot, heat oil over med. heat and sauté onion, capsicum and garlic until soft. Add pork mince and cook until browned.
- Add jalapeños, chilli powder, ancho chipotle paste, cumin, coriander seeds, paprika and salt, then stir to combine. Add crushed tomatoes, tomato paste and stock.
- Reduce heat and simmer uncovered for approx. 90 mins, stirring regularly to prevent sticking.
- Remove from the heat, divide evenly into serving bowls and top with avocado slices and coriander leaves. Serve with corn chips, spring onions, and a wedge of lime.
