Texas Crispy Fried Bacon
I think we can all agree that bacon perfect as it is, but there's no reason why it can't be levelled up by coating it in herbs, spices and beer then frying it. Serve it with a refreshing dip and you might have just found your new favourite way to eat bacon.

What you’ll need

INGREDIENTS

  • 500g SunPork Fresh Foods thick-cut bacon
  • 3 cups oil, for frying
  • 2 tsp. dried oregano
  • 2 tsp. dried basil
  • 2 Tbsp. paprika
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 1 tsp. celery salt
  • 2 cups flour
  • 4 eggs
  • ½ cup beer
  • 1 Tbsp. maple syrup
  • 1½ cups sour cream
  • ¼ cup coriander, finely chopped
  • 1 jalapeno, finely chopped
  • ½ fresh lime, juiced
  • Salt and pepper, to season

How to make it

  1. Heat oil in a medium saucepan or Dutch oven over a med heat.
  2. In a bowl, combine all the herbs and spices, then season with salt and pepper. Sprinkle half the mixture over the bacon, covering both sides generously. Add the remaining spice mixture to a shallow bowl along with the flour.
  3. Whisk eggs, beer, and maple syrup together in another shallow bowl.
  4. Lightly coat the bacon piece in the flour then dip into the egg mixture, allowing any excess to drip off before coating in the flour mixture once more. Repeat this process until all the bacon pieces are coated.
  5. Working in batches, carefully add the bacon pieces to the hot oil and cook for 4-5 mins until golden brown and crispy. Place onto a wire rack to drain and repeat until all the bacon is cooked.
  6. In a small bowl combine sour cream, coriander, jalapeno and lime juice, then season with salt and pepper.
  7. Serve and enjoy!
