INGREDIENTS
- 250g SunPork Fresh Foods bacon
- 2 brown onions, thickly sliced rings
- ½ cup brown sugar
- ¼ cup sriracha
- ¼ cup honey
Dipping sauce
- 1 cup mayo
- 3 Tbsp. sriracha
- ½ lemon, juiced
- 2 garlic cloves, minced
How to make it
- Pre-heat fan forced oven to 200°C. Line a baking tray with foil and place a cooling rack on top.
- Separate the sliced onion, leaving 2 rings connected together.
- Dust bacon with an even layer of brown sugar on both sides.
- Gently and tightly wrap the bacon around the onion ring making sure to overlap slightly. Depending on the size of the onion ring you may need 2 rashers of bacon. Use some toothpicks to help hold them together.
- In a small bowl, combine ¼ cup sriracha and honey, then brush over the bacon.
- Place on the rack and repeat until all the onion rings have been wrapped.
- Place in the oven and bake for 10 mins before turning and cooking for another 15 mins.
- While the onion rings are cooking, combine all the dipping sauce ingredients together.
- Serve the glazed onion rings alongside the dipping sauce and enjoy!
