Burrata and Tomato Salad with Bacon Crisps

What you’ll need


  • 6 Rashers SunPork Fresh Foods Bacon, cut into 10cm lengths
  • 1 burrata cheese
  • 2 Tbsp. tomato chutney/jam
  • 100g cherry tomatoes, halved
  • 50g semi-dried tomatoes
  • 2 French shallots, finely sliced
  • 2 Tbsp. extra virgin olive oil
  • Fresh basil leaves

How to make it

  1. Preheat fan-forced oven to 150⁰C .
  2. On a lined baking, evenly lay out rashers of bacon, cover with grease proof paper and sandwich between a second baking tray.
  3. Place in oven for 30 mins or until desired crispiness has been reached.
  4. Take a spoon and place the tomato relish in the centre of the plate.
  5. Place burrata on top of relish.
  6. Scatter cherry tomatoes, sun-dried tomatoes and French shallots around the burrata.
  7. Drizzle with olive oil and garnish with fresh basil leaves and bacon chips.
  8. Enjoy!
