Burrata and Tomato Salad with Bacon Crisps

What you’ll need
INGREDIENTS
- 6 Rashers SunPork Fresh Foods Bacon, cut into 10cm lengths
- 1 burrata cheese
- 2 Tbsp. tomato chutney/jam
- 100g cherry tomatoes, halved
- 50g semi-dried tomatoes
- 2 French shallots, finely sliced
- 2 Tbsp. extra virgin olive oil
- Fresh basil leaves
How to make it
- Preheat fan-forced oven to 150⁰C .
- On a lined baking, evenly lay out rashers of bacon, cover with grease proof paper and sandwich between a second baking tray.
- Place in oven for 30 mins or until desired crispiness has been reached.
- Take a spoon and place the tomato relish in the centre of the plate.
- Place burrata on top of relish.
- Scatter cherry tomatoes, sun-dried tomatoes and French shallots around the burrata.
- Drizzle with olive oil and garnish with fresh basil leaves and bacon chips.
- Enjoy!
