Spiced Pork & Hummus

What you’ll need
INGREDIENTS
- 500g SunPork Fresh Foods Pork Mince
- 3 cups canned chickpeas
- ¼ aquafaba (chickpea juice)
- 9 garlic cloves, minced
- ½ cup lemon juice
- 1 cup tahini
- 3 tsp. cumin
- 8 Tbsp. extra virgin olive oil
- 1 brown onion, finely diced
- 1 tsp. cinnamon
- 1 tsp. cayenne pepper
- 1 tsp. smoked paprika
- ½ tsp. allspice
- 2 cups cherry tomatoes, halved
- 1 Lebanese cucumber, sliced
- 3 Tbsp. mint, roughly chopped, plus additional for garnish
- ½ lemon, juiced
- ¼ cup pine nuts, toasted
- Pita bread, to serve
- Salt and pepper, to taste
How to make it
- Add chickpeas, aquafaba, 4 garlic cloves, lemon juice, tahini and 1 tsp. cumin to a food processor, then blend until smooth. Slowly add 3 Tbsp. extra virgin olive oil and salt to taste, blending continuously until combined. Set hummus aside.
- Heat 2 Tbsp. extra virgin olive oil in a fry-pan over med. heat. Add onion, cook for 5 mins until softened, add remaining garlic and continue cooking for 1 min until fragrant.
- Add pork mince, remaining cumin, cinnamon, cayenne pepper, smoked paprika and allspice, then season with salt and pepper and cook for 8-10 mins or until the mince is fully cooked.
- Meanwhile, in a bowl combine tomatoes, cucumber, mint, lemon juice and 3 Tbsp. extra virgin olive oil, then season with salt and pepper.
- Spread the hummus onto a large serving platter, then top with the pork mince, salad, and pine nuts. Drizzle with extra lemon juice, extra virgin olive oil, and garnish with mint.
- Serve with pita bread and enjoy!
