Smashed Pork Dumpling Tacos

What you’ll need
INGREDIENTS
- 500g SunPork Pork Mince
- 4 Tbsp. soy sauce
- 2 Tbsp. honey
- 2 tsp. ginger, grated
- 2 garlic cloves, minced
- 1 red chilli, finely diced
- Small bunch coriander, roughly chopped
- 2 spring onions, finely sliced plus extra to garnish
- 1 cucumber, diced
- 10 mini tortillas
- Chilli oil, to garnish
- Oil
Dipping Sauce
- ½ cup sweet chilli sauce
- 2 Tbsp. soy sauce
- ½ lime, juiced
- 2 tsp. sesame oil
How to make it
- Combine all the dipping sauce ingredients in a small bowl and set aside.
- In a bowl, add pork mince, soy sauce, honey, ginger, garlic, red chilli, coriander, and spring onion, then mix until well combined.
- Spoon a heaped Tbsp. of the mince mixture into the middle of a tortilla and spread thinly until it nearly covers the whole tortilla.
- Heat a fry-pan over med-high heat with a little oil. Add the tortilla mince side down and cook for 2-3 mins then flip and cook for another 2 mins until the tortilla is warm and slightly crispy.
- Top with cucumber, additional spring onion, chilli oil and a squeeze of lime.
- In a small bowl, combine all dipping sauce ingredients and mix.
- Serve smashed dumpling tacos alongside the dipping sauce and enjoy!
