What you’ll need
INGREDIENTS
- 500g SunPork Fresh Foods Pork Mince
- 2 tsp. oil
- 1 brown onion, chopped
- 5 garlic cloves, minced
- ½ tsp. red pepper flakes
- ½ tsp. Italian seasoning
- 1 cup risoni
- 400g canned crushed tomatoes
- ¾ cup vegetable stock
- ¾ cup cream
- 1 tsp. Worcestershire sauce
- 2 Tbsp. tomato paste
- ½ cup parmesan cheese, grated, plus extra for serving
- 2 cups baby spinach
- Salt and pepper, to taste
How to make it
- In a large saucepan over med. heat, add oil and onions, and cook for 5 mins. Add pork mince and cook for a further 5-6 mins breaking into smaller pieces until the mince has browned slightly.
- Add garlic, red pepper flakes, Italian seasoning, and risoni, stirring to combine.
- Add canned tomatoes, vegetable stock, cream, Worcestershire sauce, and tomato paste. Bring to the boil, then reduce heat to a simmer and cook for 10 mins, stirring often.
- Remove from the heat, then stir through the parmesan and spinach. Season to taste.
- Serve and enjoy!
