Pork Stroganoff

What you’ll need
- 400g pork tenderloin, sliced
- 2 Tbsp. vegetable oil
- 25g butter
- 1 brown onion, finely diced
- 2 cloves garlic, minced
- 2 tsp. paprika
- ¼ tsp. nutmeg
- 200g Brown mushrooms, sliced
- 3 Tbsp. sour cream
- 1 Tbsp. lemon juice
- Salt and pepper, to season
- Handful of flat leaf parsley, chooped
- Cooked fettuccine, to serve
How to make it
- Heat oil in fry-pan over med. Heat.
- Cook onion and garlic until tender. Add pork and brown on all sides.
- Add in paprika, nutmeg, mushrooms, sour cream, lemon juice and 1/2 cup water. Season with salt and pepper. Bring to the boil, then reduce heat and allow to simmer for 20 mins.
- Serve with fettuccine and sprinkle with flat leaf parsley.
