What you’ll need

  1. 400g pork tenderloin, sliced
  2. 2 Tbsp. vegetable oil
  3. 25g butter
  4. 1 brown onion, finely diced
  5. 2 cloves garlic, minced
  6. 2 tsp. paprika
  7. ¼ tsp. nutmeg
  8. 200g Brown mushrooms, sliced
  9. 3 Tbsp. sour cream
  10. 1 Tbsp. lemon juice
  11. Salt and pepper, to season
  12. Handful of flat leaf parsley, chooped
  13. Cooked fettuccine, to serve

How to make it

  1. Heat oil in fry-pan over med. Heat.
  2. Cook onion and garlic until tender. Add pork and brown on all sides.
  3. Add in paprika, nutmeg, mushrooms, sour cream, lemon juice and 1/2 cup water. Season with salt and pepper. Bring to the boil, then reduce heat and allow to simmer for 20 mins.
  4. Serve with fettuccine and sprinkle with flat leaf parsley.
