Pork Stroganoff

What you’ll need
400g pork tenderloin, sliced
2 Tbsp. vegetable oil
25g butter
1 brown onion, finely diced
2 cloves garlic, minced
2 tsp. paprika
¼ tsp. nutmeg
200g Brown mushrooms, sliced
3 Tbsp. sour cream
1 Tbsp. lemon juice
Salt and pepper, to season
Handful of flat leaf parsley, chooped
Cooked fettuccine, to serve
How to make it
Heat oil in fry-pan over med. Heat.
Cook onion and garlic until tender. Add pork and brown on all sides.
Add in paprika, nutmeg, mushrooms, sour cream, lemon juice and 1/2 cup water. Season with salt and pepper. Bring to the boil, then reduce heat and allow to simmer for 20 mins.
Serve with fettuccine and sprinkle with flat leaf parsley.
