Pineapple Fried Rice
Looking to use up some leftover ham? This dish is quick and easy to throw together using simple ingredients, and the pineapple adds a zesty twist to this traditional favourite.

What you’ll need
INGREDIENTS
- 200g SunPork Fresh Foods Half Leg Ham, diced
- 1 whole pineapple, head attached
- 1 Tbsp. oil
- 1 brown onion, diced
- 2 garlic cloves, crushed
- 1 carrot, diced
- 1 red capsicum, diced
- 3 cups jasmine rice, cooked
- ½ cup frozen peas
- 3 Tbsp. soy sauce
- ½ pineapple, chopped
- 1 shallot, thinly sliced
- 1 red chilli sliced
- 1 sprig coriander leaves
How to make it
- Cut the pineapple in half and hollow out each side to create a bowl.
- Remove the core and dice up the pineapple that was removed.
- In a wok over high heat, add the oil and cook onion and garlic until fragrant.
- Add carrot and capsicum and stir-fry for approx. 3 mins or until carrots have softened.
- Add rice, ham, peas and soy sauce and stir-fry for a further 10 mins.
- Add pineapple and stir for 2 mins.
- Serve in the pineapple bowl and garnish with chilli and coriander.
