How to make it

  1. Cut the pineapple in half and hollow out each side to create a bowl.
  2. Remove the core and dice up the pineapple that was removed.
  3. In a wok over high heat, add the oil and cook onion and garlic until fragrant.
  4. Add carrot and capsicum and stir-fry for approx. 3 mins or until carrots have softened.
  5. Add rice, ham, peas and soy sauce and stir-fry for a further 10 mins.
  6. Add pineapple and stir for 2 mins.
  7. Serve in the pineapple bowl and garnish with chilli and coriander.
