Pineapple Fried Rice
Looking to use up some leftover ham? This dish is quick and easy to throw together using simple ingredients, and the pineapple adds a zesty twist to this traditional favourite.

What you’ll need
INGREDIENTS
200g SunPork Fresh Foods Half Leg Ham, diced
1 whole pineapple, head attached
1 Tbsp. oil
1 brown onion, diced
2 garlic cloves, crushed
1 carrot, diced
1 red capsicum, diced
3 cups jasmine rice, cooked
½ cup frozen peas
3 Tbsp. soy sauce
½ pineapple, chopped
1 shallot, thinly sliced
1 red chilli sliced
1 sprig coriander leaves
How to make it
Cut the pineapple in half and hollow out each side to create a bowl.
Remove the core and dice up the pineapple that was removed.
In a wok over high heat, add the oil and cook onion and garlic until fragrant.
Add carrot and capsicum and stir-fry for approx. 3 mins or until carrots have softened.
Add rice, ham, peas and soy sauce and stir-fry for a further 10 mins.
Add pineapple and stir for 2 mins.
Serve in the pineapple bowl and garnish with chilli and coriander.
