What you’ll need
INGREDIENTS
500g SunPork Fresh Foods Pork Mince
2 tsp. oil
1 brown onion, chopped
5 garlic cloves, minced
½ tsp. red pepper flakes
½ tsp. Italian seasoning
1 cup risoni
400g canned crushed tomatoes
¾ cup vegetable stock
¾ cup cream
1 tsp. Worcestershire sauce
2 Tbsp. tomato paste
½ cup parmesan cheese, grated, plus extra for serving
2 cups baby spinach
Salt and pepper, to taste
How to make it
In a large saucepan over med. heat, add oil and onions, and cook for 5 mins. Add pork mince and cook for a further 5-6 mins breaking into smaller pieces until the mince has browned slightly.
Add garlic, red pepper flakes, Italian seasoning, and risoni, stirring to combine.
Add canned tomatoes, vegetable stock, cream, Worcestershire sauce, and tomato paste. Bring to the boil, then reduce heat to a simmer and cook for 10 mins, stirring often.
Remove from the heat, then stir through the parmesan and spinach. Season to taste.
